About this deal

You can easily make a lighter version of your Chipotle Mayo by substituting some, or all, of the mayonnaise for plain Greek yogurt. If you can’t find chipotle peppers, a dried and ground version works in a pinch! Just keep in mind that one dried chipotle pepper is equivalent to 1/2 teaspoon of chipotle powder. If you feel that’s not enough, you can always add a bit more and blend again. Ways To Use Chipotle Sauce And here’s what you need to make the rich chipotle sauce that the pork is braised in. Flavour to the max!!

And don't forget to take a taste of the soaking liquid that the Moritas have been resting in. You can use this soaking liquid for the adobo sauce, but if it tastes bitter to you then you can use water in place of it. and if you receive my weekly chilli newsletter, you will be familiar with our homemade Chipotle Paste– that would be soooo good! Bring a large saucepan of water to a rolling boil and place your filled and sealed jars in. There should be at least 2.5 cm (1 inch) of water above the jars. Heat your oil in a large pot or Dutch oven over medium high heat. Saute the onion until translucent, about 5-6 minutes. Take a taste for seasoning, adding more salt and lime if you want. A dash of acidity from the lime really brightens it up so don't skimp on that step!

Dips

To store leftover chipotle peppers: Since the peppers and sauce have a strong flavor, you’ll most likely only be using a quarter of the can. So I recommend freezing them in a freezer-safe bag or glass container. They’ll keep for about 3 months and can thaw easily whenever you’re ready to use. More Creamy Sauces That Taste Just As Good The good news is this sauce keeps very well. Simple refrigeration in an airtight container will keep it fresh. Or you can puree the remainder of the can and freeze it in small tablespoon dabs. An ice tray works wonders for that.

As is usually the case, chipotles have a different name than their fresh counterpart -- and in this case you need to start with a jalapeno to get a chipotle. This dish is made with pork shoulder which is an economical tough cut of meat that needs to be slow cooked to fall-apart tenderness. I just use cumin to flavour it before searing because the pork absorbs so much flavour while it’s slow cooking, it really doesn’t need much on the surface! The chipotle sauce (and beans!) Be careful! This is a potent mix. Most recipes call for a single tablespoon or two maximum. In this case, take a single chipotle with some of the sauce, pulse chop it (or simply use a knife), and measure the sauce according to the recipe. Any more and you may find the recipe a lot hotter than you expect. I hope this post has turned Chipotle Mayo into a no-thinking-involved recipe for you. Keep some in the fridge and you'll always have some Secret Sauce on standby that you can unleash on your friends and family. Just don't tell 'em how easy it is to make.
