They believe their distillation process ensures their bourbon’s rich, powerful flavour and the addition of red winter wheat adds a necessary smoothness.The ultimate expression of Canadian Rye Whisky, Lot 40 is 100% rye grain that is made the old-fashioned way - distilled in a traditional copper pot still one batch at a time to preserve the notes that truly define rye whisky. I have not had the opportunity to try it so I can’t comment on the taste, but the original did contain malted rye to supply the enzymes for starch conversion, whereas the present version uses 100% unmalted rye and use commercial enzymes for conversion. Lot 40 Dark Oak gets its name from its maturation, which began in lightly charred barrels before it was then transferred to heavily charred American oak barrels for finishing. MADE FROM 100% RYE –Lot 40 embraces the singular qualities of rye, and compliments the flavour by aging in new American oak, which helps showcase the complexities that 100% rye whisky can offer. Also I’m fairly certain the apparatus details on the label have nothing to do with the equipment used to make the current Lot 40.

Also, unlike most Canadian whiskeys – aka Canadian “ryes” – Lot 40 is aged in new charred oak casks, while Canadian “rye” are aged in used oak casks.
