Fortaleza is distilled twice in two 100-year-old copper pot stills and the Añejo is rested in American oak barrels for 18 months. Followed up with a woodsy forest aroma, hot cider with a stick of cinnamon, vanilla, juicy fruit, oranges and grilling pineapple. The cooked agave are then unloaded by hand and crushed by the traditional tahona stone mill to release the pulp and juices.

In 1999, Don Guillermo began the process of restoring his family’s old distillery, Destileria La Fortaleza, which was retired in 1968 in favor of more ‘efficient’ facilities. Launched in 2005, Fortaleza Tequila is relatively new to the industry but has 140 years of history behind the brand, with the current owner's great-great-grandfather, Don Cenobio, founding his first distillery – La Perseverancia – in 1873.
