This machine was designed with sous vide in mind, but it's just as capable at vacuum-sealing food in bags for any reason. We love its sleek look, and, more importantly, its simple controls. There are just three buttons: vacuum and seal, which automatically senses when the air has been removed and seals the bag; pulse, which lets you remove air in a more controlled way for delicate items; and seal, which heat-seals the bag after you use pulse mode. Even a complete beginner could figure this thing out without opening the user manual (though it does come with one). Few people have endless storage space in their kitchens. While keeping all your appliances on the countertop would be nice, looking for a model with easy storage options might be right for you. The FoodSaver VS0150 PowerVac Compact Vacuum Sealer can be stored horizontally, and its small size makes this very convenient. However, it’s also designed to be stored vertically, something you can’t say for most vacuum sealers. We wish it came with bag roll storage and a delicate suction strength option, but it does the job well. Plus point it is a smart starter kit for beginners. When purchasing a vacuum sealer, assess the machine’s ability to seal food tightly without crushing delicate or irregularly shaped items. Ideally, a machine will offer its users a good amount of control over the power being used. You’ll want to look at each machine's control options to ensure it has a mode designed for more delicate foods.

There is less risk of seal bag opening during cooking or when it is kept in a freezer. Overall, this sealer is simple to use for any sealing task. We love that it’s small enough to fit into a kitchen drawer for easy storage and access. We also love that it automatically disables itself to prevent overheating during prolonged use. It's perfect for any kitchen at a price that can’t be beat.

How we tested

Pork Loin Test: We used the machine to vacuum seal a lightly seasoned pork loin, which we then cooked sous vide per these instructions.

VacMaster VP210 Chamber Vacuum Sealer is built for commercial use, so it's the largest, heaviest, and most robust to consider. The chamber height is an impressive 5 inches, meaning there’s more space for food. At a whopping 83 pounds, this is likely going to park itself somewhere, where it will stay. It’s definitely not easily portable. We found the handheld vacuum sealer so essential we could see getting a stand-alone version and skipping the multifunctional device. In a side-by-side tasting, meats marinated in the vacuum-sealed canister and bag were noticeably more moist and flavorful than the meat marinated in a regular zip-top bag. Still, those who want the flexibility of customizing their own bag size won’t be satisfied with just the handheld device. Oliso Pro Frisper Smart Vacuum Sealer: This sealer failed basically every test and was difficult to use. The need for brand-specific bags that can only be reused up to seven times is a tough sell, especially when those bags are in a limited range of sizes and shapes. FoodSaver V4840 Vacuum Sealer Machine with Automatic Bag Detection: This was one of the most expensive models we tested, and only had so-so performance. Anova Precision Vacuum Sealer Pro: This machine performed similarly well to the standard Anova Precision above, but it adds wet and dry modes and an accessory port. It also costs twice as much, and we just don't think the added functionality is worth it.The Nesco VS-12 Deluxe Vacuum Sealer is our favorite vacuum sealer of the bunch. This countertop model is sleek and not too big to keep out on display or store. The button panel on the top is designed simply for ease of use. One of our test kitchen’s favorite features was how delicate this sealer was when dry sealing the Chex Mix. Without breaking any of the cereal pieces, it was able to seal the bag tightly. To determine the best model for any occasion, we tested 23 vacuum sealers. These ranged from handheld to countertop models — some very simple and some that felt more professional in style. The tests consisted of an initial sealer setup, evaluating the number of accessories and bags each machine had, settings for moist or dry foods, and suction power. Design: Most countertop vacuum sealers operate in basically the same way, so the materials they're made of and the way they're laid out can make a big difference. As we performed the tests, we made note of any problems with control buttons, hinges, lid latches, and other design aspects. Functions: Before buying a vacuum sealer, think about your needs. Do you need something straightforward and intuitive for simple tasks, like freezing occasional cuts of meat or leftovers? If so, a handheld model might be a good choice. Do you need a model that's also designed for sous vide? If so, make sure the bags will stand up to high heat, and consider a model that offers double sealing. If you plan to marinate or store liquid items, choose a machine with a "moist" or "wet" setting (and generally use the longest bag you can find or create a longer bag from the roll to help the machine seal wet foods more easily). If you often store delicate items, look for a "gentle" setting or the ability to select a lower vacuum level. The best vacuum sealers are slim and can seal both dry foods and liquids, as well as pulse and seal. But it's worth considering the following factors when looking to buy:

To prevent overheating, wait up to a minute (or the amount of time specified by the manufacturer) between sealings.SEAL THE DEAL: Vacuum sealing is hands down the best way to ensure no air enters your bag during a sous vide cook – ensuring your food will stay fully submerged while cooking, and seal in maximum flavor. Additionally, the ability to seal, freeze, and store food for later makes prepping your meals in advance a breeze (Voltage: 110).

Anova vacuum sealer has easy-to-use control features. There are three buttons on the control Panel; the first one is Vacuum and Seal, the Second is Seal, and the last one is the Pulse Vacuum. There are no other buttons like moist/dry options. It means it provides the same vacuum seal to all types of food. The Geryon performed well with the delicate foods test but struggled with liquids, as the marinaded meats caused it to freeze up and stalled sealing. Bag storage and a cutting feature can make using a vacuum sealer even easier. We often prefer a model with storage capabilities, as the bag roll doesn’t take up additional space in your kitchen. Efficiency is critical here; the ability to cut the bag with the vacuum sealer saves time and increases the accuracy of your cut.FRESKO Vacuum Sealer Machine: This model struggled with sealing liquid-rich foods, so we can't recommend it. Ground Turkey Test: We used the chamber to seal one pound of ground turkey, which we then froze for two weeks to see if any ice crystals formed. Most vacuum sealers will include at least a few bags to get you started, but that ranges from a handful that will last a week to multiple rolls that could be several months' worth. Additional bags aren't terribly expensive, but a generous supply in the box adds some value.
