About this deal

As in China, eating long noodles in Korea is also associated with longevity and various noodle dishes mark special occasions. While most types of Korean noodles are knife- or machine-cut, sujebi stands out because the wheat flour dough flakes are roughly torn by hand. You literally have to tear the dough into bite-sized pieces and then drop them into the boiling soup!

Other options– Scotch fillet/boneless rib eye is best, as it is the juiciest. If using other steak cuts like rump, porterhouse/t-bone, sirloin/strip etc (especially if economical), I recommend tenderising them before using in the recipe so the beef pieces are extra tender (directions in recipe card). Green onions: If you don’t have green onions (scallions) or spring onions, you can use finely chopped shallots or regular onions. Or sprinkle the finished dish with chives. Gochugaru: Korean ground chili flakes come in a variety of texture and spice. I like to use finely ground powder for this sauce. The most important part of this humble noodle dish to me is the broth. YUM. That sauce is everything! I really like that it’s not as sweet as the Japchae sauce you get at some Korean restaurants which I find a little too sweet. Use food-grade plastic gloves to gently mix the sauce into the myeon. Your hands will mix in the sauce more thoroughly and prevent breakage.
