If you are using a lidded barbecue you don’t have to worry so much about overfilling it, as you can usually snuff the charcoal and reuse it again later. What’s more, good-quality charcoal usually burns more efficiently, leaves minimal ash behind for clean up and lights easily, so you don’t have to resort to chemical firelighters that could taint your meal. The reason I prefer large/medium chunks is because I find it easier to reload my charcoal when they're bigger - simple as that. Likely what's happening is the "Texas Sized" bag contains larger lumps to compete with products like FOGO's Super premium and Kamado Joe XL (both of which are below).
