The same is true of sugar. Put a few grains of regular sugar on your tongue. The receptors on your tongue identify it as sweet, but no flavor. That changes when you use quality sugar. I did my own taste test with Tate+Lyle® Organic Pure Cane Sugar and had everyone in my family do the same, comparing table sugar with a top quality sugar. Beyond merely the “sweet” sensation in your mouth, you’ll detect warm, subtle hints of caramel. The flavor is truly delightful. Rathfinny’s Sussex sparkling wines are made using classic methods, which have been honed over the course of centuries, but are also low-intervention and sustainably produced. All four of their vintages are produced by the Traditional Method, which is where the secondary fermentation takes place inside the bottle, and the lees left inside while they age (for a minimum of twenty-four months for rosé, and thirty months for the other sparkling wines) to give them distinct autolytic notes. However, there are also a number of less traditional practices also in place on the estate, such as the growth of plants between rows of vines to encourage insects like parasitic wasps, which reduces pests on the vine whilst minimising the use of chemicals. This bright, fresh hot sauce, made from fermented Scotch bonnet and cayenne pepper cooked with preserved lemon, mango and ginger, has an enticing aroma and delicious flavour.
