The Jury of the prestigious International Wine and Spirit Competition (IWSC) in London has awarded a GOLD medal in late July 2019. Precisely the incomparable blend of complex yuzu-citrus aromas and soft premium Sake that turns our Yuzu into the perfect drink for the summer has also convinced the judges: Rich, bright citrus bursts forth from the glass: unmistakable yuzu with a gentle floral aroma; a great combination of sweetness and tartness. A beautiful product that captures the flavour of yuzu perfectly. We enlisted a panel of accredited experts and sake enthusiasts to put 12 varieties and limited releases to the test. They were looking for those that offered well-balanced acidity, complex flavour profiles and a moreish mouthfeel. Infused with yuzu, a typically Japanese citrus fruit that brings acidity but also a touch of bitterness, Yuzu Sake is unique, refreshing and invigorating. The Kozaemon fared much better, though the smell and taste of sake fermentation was a bit too strong. The yuzu tasted more natural, though I’d describe it more as Sake Yuzu rather than Yuzu Sake, since there was a dominant flavour of unfiltered sake followed by a bready aftertaste. Not unpleasant, by any measure, but not quite to our liking.As they say, good things take time, and that couldn’t be truer for this Junmai Daiginjo sake by Île Four.

A few things to clear up about the national beverage of Japan, which is made from fermented rice, are how to pronounce it (sah-KAY), what to drink it out of (a wine glass, not a shot glass), and what to drink it with (just about everything).Sakes have been made by the family-owned Tosa brewery since 1877. It is currently run by Muneki Matusmoto (of the sixth generation) who still uses the original brewery 138 years later. It is situated in the beautiful mountainous region called Tosa Ryohoku in the Kochi prefecture. The name of their range, ‘Keigetsu’, is a Japanese term which describes the beautiful evening scene created when the moon hangs over Katsurahama shore. Keigetsu sakes are made from organically-grown local rice varieties (Hinohikari and Gin no Yume) instead of modern rice varieties specifically developed for making sake, such as Yamadanishiki. This is because the brewery predates the development of many of the popular sake specific rice varieties. Mr. Matsumoto also believes that his local rice, grown within 2 km of the brewery, is best suited to Tosa because they grow well on their terraced rice paddies at 300-600 m above sea level which have high diurnal temperature swings. In addition to rice, they also produce a Yuzu sake from organic Yuzu fruit grown by Mr. Matsumoto’s relatives.
