UPDATE: The world of alcohol-free spirits have come on in big strides over the last couple of years. In just the last month rum master Captain Morgan has announced its 0.0% rum, Spiced Gold. It has been in the works for two years, and gone through more than 400 taste rounds. We can't wait to try this out. Getting that intensity of a spirit in a 0% alcohol version is extremely hard. During the early 20th century all the stills were merged and all ended up in the hands of DDL – Demerara Distillers Limited. The wooden coffey still – EHP – is the last one left since 1880 and the only wooden column still used in the world and what gives El Dorado rum its distinctive flavor. Made of a Guyanese wood called Greenheart, it produces mild and fruity medium bodied rum. The EHP single barrel rum from El Dorado comes from this still. Column Still: One of two basic rum distilling methods employed since the 19th Century. Setups typically consist of two tall, stainless steel tubes filled with metal plates that extract impurities from heated alcohol vapors as they rise through the system. All of DDL’s rums are distilled from molasses made from locally grown sugarcane," Hamilton says. "A lot of other distillers claim locally grown sugarcane, but the difference with DDL is the low sulfur content of the soil and the high residual sugar content of the molasses made by the Guyana Sugar Corporation." What does Demerara rum taste like? Guyana was a pristine land inhabited by Arawaks and Caribs when Christopher Columbus came ashore in 1498, though it was not produced on a large scale until the late 1700s, roughly a century later than in the rest of the Caribbean. As Guyana’s plantation owners entered the sugar industry late, they were able to import advanced equipment for milling sugarcane and the industry exploded.

Imagine if we classified whisky as being amber, red or yellow. That would be doing the spirit a massive disservice. But that’s what many do with rum: break it down by colour.

It’s about this time that we need to introduce caramel into the equation. Spirit caramel is often used in batch to batch color adjustment. A little caramel goes a long way and some producers use more than they should to give a false image. This means you can get all sorts of different kinds of rums, like white, golden, dark, navy, spiced and fruit rum - and even combinations of those key types. Traditionally, rum comes from the Caribbean, but these days you can get it from all over the place, including Scotland. Leeuwarder Courant". Leeuwarder Courant via Delpher (in Dutch). 23 March 1782 .
