The 21-year-old version is smooth and has cognac-type notes, due to the aging process in a Versailles Single Wooden Pot Still. The flavor of this rum has a rich taste of tropical fruit and spices on the nose, with hints of honey and dark sugar, with an elegant and dry finish. No less a luminary than Beachbum Berry has said that Ed Hamilton's Guyana 86 proof is "One of only 6 rums that a Tiki enthusiast will ever need. When it comes to navy Rums, the colour is irrelevant - a proper navy Rum should be high proof (perhaps even Overproof) and a blend of different marques of Rum.

Demerara rums are known for their deep amber color, unique aroma, and notes of molasses, caramel, some fruit and spice flavors. The problem is that the pre-existing condition of the barrel is very important – is it brand new or has it been used a lot of times before?
