The still-strength spirit is rested on site in stainless steel containers for several weeks to marry the flavors and develop a smooth character. Axia has taken a new approach to the traditional Mastiha liqueur of the island, producing instead a completely dry, spirit-strength drink for use in cocktails the way gin might be.A beautiful expression of the unique characteristics of Mastiha, but with additional velvety flavour notes of bergamot and cypress, and a fragrant rose aroma.

Axia is an elegant, extra dry spirit distilled from the aromatic resin of the Mastiha tree, a gnarled and twisted evergreen found clutching to the hillsides of Chios, Greece. The dried resin crystals are harvested and cleaned by hand, then double distilled before being bottled without any sweetening.The palate is sweet notes of liquorice and pine at first, then notes of pepper and lemon zest with a hint of scented wood. The lychee is nutty and delicate, there’s a hit of citrus and an even bigger hit of strong alcohol – I could taste the Mastiha more clearly this time.
